Ingredients:
12 pcs green Thai chili
12 pcs red Thai chili
1 whole sliced onions
3 tbsp bagoong (shrimp paste)
1 can coconut milk
1 can coconut cream
3.5 lbs sliced pork belly
Egg plant
1 whole minced garlic
Olive oil
1/2 tsp black pepper
1 tsp salt
Add sugar if coconut milk not sweet
Directions:
Pan fry minced garlic then sliced onions.
Add salt and black pepper
Then stir in pork belly and cook with lid on.
After a few minutes, add bagoong and mix.
Add coconut milk and simmer for 5 minutes.
Add red chilis and simmer 5-10 minutes
Add coconut cream and green chili and simmer until all the liquid is mostly rendered
