A fiery Filipino coconut stew with pork and chilies. Rich, creamy, and spicy enough to make you sweat through your tsinelas.
A fiery Filipino coconut stew with pork and chilies. Rich, creamy, and spicy enough to make you sweat through your tsinelas.

Ingredients:


  • 12 pcs green Thai chili

  • 12 pcs red Thai chili

  • 1 whole sliced onions

  • 3 tbsp bagoong (shrimp paste)

  • 1 can coconut milk

  • 1 can coconut cream

  • 3.5 lbs sliced pork belly

  • Egg plant 

  • 1 whole minced garlic

  • Olive oil

  • 1/2 tsp black pepper

  • 1 tsp salt

  • Add sugar if coconut milk not sweet 


Directions

  1. Pan fry minced garlic then sliced onions. 

  2. Add salt and black pepper

  3. Then stir in pork belly and cook with lid on.

  4. After a few minutes, add bagoong and mix.

  5. Add coconut milk and simmer for 5 minutes.

  6. Add red chilis and simmer 5-10 minutes

  7. Add coconut cream and green chili and simmer until all the liquid is mostly rendered
